We conducted transcriptome analysis of Komagataeibacter europaeus CGMCC 20445 samples under different acidity conditions to elucidate the changes in differentially expressed genes throughout the fermentation process. Overall design: Samples used for transcriptome sequencing were named as A10h (acidity: 1.38 g/100 mL), B10h (acidity: 1.44 g/100 mL), C10h (acidity: 1.46 g/100 mL), A40h (acidity: 2.22 g/100 mL), B40h (acidity: 2.40 g/100 mL), C40h (acidity: 2.40 g/100 mL), A64h (acidity: 3.06 g/100 mL), B64h (acidity: 3.30 g/100 mL), C64h (acidity: 3.18 g/100 mL), A88h (acidity: 3.96 g/100 mL), B88h (acidity: 4.32 g/100 mL), C88h (acidity: 3.96 g/100 mL).
